Job Summary and Qualifications

Produces high quality foods consistently to the assigned menu in accordance to all food safety standards.

 GENERAL RESPONSIBILITIES 

1. Produces food in accordance with the menu in sufficient quantity and quality.

  • Adheres to standardized recipes. 
  • Requisitions food items according to established procedures. 
  • Check recipes & ingredient control issue on a daily basis. 
  • Adheres to designated time schedules for the patient tray line, cafe, dr, & special function. 
  • Recommends appropriate changes in recipes & forecasts. 
  • Checks menus for all production areas daily and prepares items according to the forecast in batches to retain the quality at all times. 
  • Checks leftovers on a daily bases and sees that they are utilized in recipes on the menu when appropriate. 
  • Garnishes all food and serving lines according to the standards set for each item. 

2. Maintains all departmental quality assurance standards in accordance to regulatory agencies. 

  • Adheres to HACCP based food safety preparation and cooking procedures. 
  • Checks food temperatures (cold/hot) on every item prepared to assure appropriate cooking & cooling is achieved. 
  • Checks and records refrigerator & freezer temperatures on a daily basis. 
  • Sanitizes equipment and work area prior, during, & after use. Completes designated equipment cleaning as assigned. 

3. Communicates and cooperates with all other personnel of the department to achieve overall quality of service. 

  • Informs Food Production Manager daily of food production activities and needs. 
  • Furnishes adequate food items according to established times for pts, tray line, cafe, dr & special functions. 
  • Attends 90% of all departmental and facility meetings and all required in-services. 

4. Practices safety techniques. 

  • Adheres to standard safety procedures in all aspects of the job. 
  • Learns correct equipment operating procedures and reports malfunctions to supervisor immediately. 
  • Responsible for careful and safe handling of all equipment, knives, pans, etc. 

5. Performs miscellaneous job duties as assigned. 

  • Ensures assigned duties are enthusiastically completed as designated. 
  • Ensures completion of duties provides results at the level requested.

EDUCATION PREFERRED:  High School Graduate/Equivalent
