The Culinary Manager will manage the goods and deliveries moving in and out of the food storeroom. This person will ensure that these deliveries reach the appropriate destinations and logged according to the company's purchasing and procurement standards.

What will I be doing?

You will be responsible for performing the following tasks to the highest standards:

  • Possess a practical understanding of all Food & Beverage purchasing, ordering, sanitation, health and safety, and other related topics associated with inspection, receiving, storage, and maintenance of a busy storeroom.
  • Ensure all food and beverage materials – raw and pre-packaged materials – meets the Hotel quality standards.
  • Serve as the food & beverage quality standards evaluator.
  • Provide guidance and direction to Storeroom personnel on the Hotel’s F&B quality of requirements.
  • Forecast operational needs and schedules deliveries of all food.
  • Communicate with Director of Food and Beverage, Executive Chef and Sous Chefs and order all food and beverage products according to hotel needs and specifications.
  • Café supervision- perform 2-3x daily café walkthroughs checking overall area cleanliness, food being served and held at proper temperatures, all equipment is in working order, all proper disposables are stocked and being used accordingly.
  • Assist and support Team Members, Managers and the wider Food and Beverage Department in a team environment.
  • Adhere to all Health and Safety procedures particularly relating to food and beverage items.
  • Offer excellent customer service to customers and Guests.
  • Receive and forward all goods and deliveries in and out of the hotel to the correct point of contact / storage area.
  • DOH/ food safety- ability to critically view operations and identify weaknesses/ lapses and provide sensible solutions.
  • Keep accurate recordings of all incoming and outgoing goods.
  • Ensure the filing and maintenance of all requisitions and purchase orders.
  • Identify slow moving items to avoid over purchasing.
  • Proprietary ordering system experience- comfortable using online environment when placing orders (Birch St, email, vendors web portals).
  • Conduct daily inventory using order guides and shelf to sheet method to insure all items needed are ordered.
  • Maintain control over food storeroom with respect to issue releases, control over deliveries and hotel stock counts.
  • Ensure all regional and corporate purchasing programs, policies and procedures are met.

It would be advantageous in this position for you to demonstrate the following capabilities and distinctions:

  • Experience ordering alcohol/ beer/ wine and NAB. Ability to control inventory and store products correctly.
  • Previous management experience with stock control responsibility.
  • Must have full knowledge of purchasing procedures, food, beverage and printing products.
  • Basic mathematical skills.
  • Ability to read, write and speak the English language fluently in order to complete forms, inventories, read billings, invoices and communicate with co-workers and purveyors.
  • Ability to apply supervisory skills to plan, organize and direct, coach, train and discipline team members as necessary.
  • Skilled in use of Microsoft Word and Excel.
  • Ability to use electronic ordering systems.
  • Office machines: operate calculator/10-key, copier, fax, telephone.
