Job #69829 - Sodexo seeking a Food Production Manager for the Weinberg Campus, Getzville, NY. This is a 700 Resident Senior Living Retirement Community located adjacent to the University of Buffalo North Campus. This location is only a twenty minute drive from downtown Buffalo. The community serves 700 Residents which includes; Independent living, Assisted Living, and Skilled Care, Memory Care, and an Adult Day Care Center. We have one Kosher kitchen on campus.
In this roll, you will become part of our food production team at Weinberg; a showcase account for Sodexo. Our dining venues include retail and catering. Your back of the house kitchen expertise and exceptional communication skills will make you the perfect match for this position. Reporting to the Executive Chef; you assist the culinary team managing daily food production for all food outlets including resident dining, café, and catered events. The successful candidate will maintain a positive presence throughout the campus, train and develop employees, maintain Sodexo procurement standards, and work within budgetary constraints. Developing staff and maintaining regulatory compliance will be key components to this position. Duties will also include ordering supplies, tracking meals, managing expenses & standards, and team building.

Management Training / Trade School Certificate, Servsafe Certificate
Working knowledge of HACCP protocols for regulatory compliance
Food production, catering, and retail management experience
Hands on skills with inventory management, on-line ordering
Ability to train & develop 50 union hourly employees
Computer Skills; Food Management FMS & Menu Graphic SMG
Experience creating and developing menus with pricing
Sodexo Culinary Standards; recipe compliance and food quality
Labor and food cost controls and compliance
Work hours will vary with rotating weekends & Holidays.

Responsible for inventory management and procurement of food and supplies at an account/unit to ensure client satisfaction and retention for the Company. Manages food production through kitchen staff in a medium facility. Contributes to account revenue and operating profit contribution through cost containment and safety. Key Duties- Utilizes Sodexo resources, recipes, systems and programs to direct daily operations including; food production, inventory, product deliveries, invoices, and procurement operations.
- Ensures employees have appropriate equipment, supplies and resources to perform their job, and meet goals, cost controls and deadlines as assigned.
- Establishes and maintains a safe work environment including both food and physical safety in order to comply with all regulatory and Sodexo standards
- Complies with budget requirements by controlling costs (i.e. labor, inventory, equipment, materials) and making adjustments when necessary
- Supervises employees by delegating, assigning and prioritizing activities, and monitoring operating standards
Qualifications & Requirements
