Sodexo is seeking a talented, experienced Production Manager to help oversee culinary operations at Oral Roberts University in Tulsa, OK.

Sodexo also manages campus facilities on the ORU campus, including physical plant, landscaping, housekeeping, and general maintenance.
The Production Manager will play an integral role in overseeing the execution of menus that capture modern trends with a focus on health and wellness and "clean" food preparation. Solid classical training is a plus, with an emphasis on modern techniques, presentation, and demonstration cooking. As in most professional kitchens there are excellent opportunities to identify, educate, and retain quality staff! In addition to hands-on kitchen management the Production Manager will be responsible for inventory management and ordering, and will assist the Executive Chef in training and overseeing staff in record keeping for our HACCP program as well as food production.
The Production Manager reports directly to the Director of Operations, and in concert with the Executive Chef will oversee culinary operations for the Student Cafeteria, as well as all food items for Catering. The President's Office entertains frequently, and there are ongoing opportunities to assist in developing custom menus for those functions both seasonally and per-event. We host a number of major local events throughout the year that are catered for private clients, so there is a need to be competitive with other local caterers regarding food quality, menu options, and profitability.

Responsible for inventory management and procurement of food and supplies at an account/unit to ensure client satisfaction and retention for the Company. Manages food production through kitchen staff in a medium facility. Contributes to account revenue and operating profit contribution through cost containment and safety. Key Duties- Utilizes Sodexo resources, recipes, systems and programs to direct daily operations including; food production, inventory, product deliveries, invoices, and procurement operations.
- Ensures employees have appropriate equipment, supplies and resources to perform their job, and meet goals, cost controls and deadlines as assigned.
- Establishes and maintains a safe work environment including both food and physical safety in order to comply with all regulatory and Sodexo standards
- Complies with budget requirements by controlling costs (i.e. labor, inventory, equipment, materials) and making adjustments when necessary
- Supervises employees by delegating, assigning and prioritizing activities, and monitoring operating standards
Qualifications & Requirements
