Sodexo Government North America is seeking an experienced Executive Chef 2 at Dyess Air Force base. The Executive Chef 2 will be the key driver of the culinary program at Dyess AFB; serving enlisted airmen, officers, and civilians in the base dining facility.
Dyess Air Force base is located on the southern edge of the city of Abilene, Texas in Taylor County, and is known for being the greenest bases in the Air Force. It was the first Department of Defense operation to use renewable energy.
This position will be responsible for culinary training and development for the airmen and civilian cooks. The Executive Chef 2 will be responsible for the implementation and adherence both food and physical safety culinary programs. The chef will work closely with Air Force personnel to ensure accurate inventory and production records, while ensuring the facility operates within the established budgeted cost targets. The Executive Chef 2 will assume full operational responsibility in the absence of the General Manager.
The Executive Chef 2 will report to the General Manager and lead the culinary team of 30 cooks. This position will plan, organize, and manage the daily food production.

- manage the daily food production including production planning and controls;
- ensure Sodexo Culinary Standards including recipe compliance and food quality;
- manage food costing, controls and compliance;
- have high expectations for customer service and quality of food;
- have the ability and willingness to develop and train Airmen;
The ideal candidate has:
- a strong culinary background and Culinary Degree or Certification
- excellent leadership and communication skills with the ability to maintain the highest of standards and implements company policies
- previous experience working in a high volume facility
- strong management skills
- a focus on food safety/sanitation and physical safety (ServSafe certification is required)

Provides culinary leadership within a medium sized unit including menu planning, program execution and staff management & training. Works directly with internal and external clients managing the catering process from beginning through execution. Key Duties- Implements & coordinates the culinary function. - Directs & trains cooks & utility workers.- Ensures food preparation & production meets operational standards.- Manages catering & retail areas.- Customer & Client satisfaction.- Financial management to include food cost & labor management.- Manages food & physical safety programs.
Qualifications & Requirements
